Rice Surprise Frugal Recipe

Tonight i wasn't really sure what to make for dinner, i had a long busy day cleaning the bathroom and organizing things, so i just wanted something quick that i could throw together, so i looked at the ingrediants i had on hand that would make for a simple dinner.

Rice Surprise

I had a little white rice left in a box
a little brown rice left in a box
about a pound of pre-cooked frozen hamburger meat
a box of generic stuffing chicken flavored
a can of chicken stock
some leftover mozzerella cheese
a can of ranch style beans
a can of corn
a handful of frozen veggies
a can of tomato sauce

I cooked both rices first, i mixed them up and measured how much rice i had and put equal parts rice and water and microwaved for the designated time on the box, had to add a few extra minutes to absorb all the water.
then i put the rice into a large oven baking dish. set the oven for 400 degrees.
then made the stuffing as suggested on the box but used the chicken stock instead of water and microwaved following the directions on box.
Then i put the stuffing to the side, and took my pre-cooked hamburger meat, and all my canned goods and my frozen veggies and put them in a big bowl and heat those in the microwave till the veggies and meat were thawed and a little warm.
i then added various spices to the rice, italian spice, salt, pepper, onlion powder, garlic powder, you can add pretty much whatever you have a taste for.
then i took the heated meat and veggies and canned goods mixture and poured it on top of the rice mixture and mixed it all together.
Then i added half the mozzerella cheese to the top of the mixture and then added spoonfulls of the stuffing on top and topped it off with some more mozzerella cheese. Then i baked it in the oven till the cheese was melted and the stuffing was a little crispy, about 15-20 minutes.
This could easily feed 6-8 people, me and my husband will be having leftovers for a while.
